Lentil Rosemary Soup Beauty

This soup is tasty, hearty, easy to prepare, vegan, gluten-free, and the rosemary adds an earthiness that will entice even the most committed carnivore. Enjoy everyone! 

Instructions

  • 1. Heat olive oil in a large soup pot over medium heat. Stir in the onion, carrot, celery and garlic and saute until translucent, about 10 minutes, stirring occasionally.
  • 2. Add the vegetable broth, water, lentils, rosemary, bay leaves, pepper and salt.
  • 3. Bring to a boil, then reduce heat to a simmer. Cover and cook until lentils are soft, about 20-30 minutes.
  • 4. Remove bay leaves and stir in lemon juice before serving.
