Homemade Almond Milk

There is nothing like fresh, homemade almond milk. It’s great with your morning cereal, and a delicious alternative to that morning latte; warmed, sweetened with honey and flavored with a dash of cinnamon.

  • 1. In blender or Vita-Mix, blend almonds and water on high for 2-3 minutes. If your blender won’t hold 4 cups of water and 1 cup of almonds you may need to do it in batches. Make sure the nuts are completely blended.
  • 2. Strain through a nut milk bag or layers of cheesecloth.
  • 3. Rinse blender jug and return milk to blender. Blend with sea salt and desired sweetener.
  • 4. Adjust for sweetness.
  • 5. Milk will separate as it sits, simply give it a stir or shake before serving.
  • 6. *To sweeten if desired, toss in a few pitted dates with the almonds, or I like to replace part of the water with an equal amount of liquid reserved from soaking dates. Agave or stevia are also options.
