Colorful Peppers – loaded with Vitamin C

Instructions

  • 1. In a steamer basket, steam green beans and half of the pepper strips until crisp tender. Leave remaining half of pepper strips raw, and set aside. The green beans will take a bit longer to cook than the peppers. Put them on the bottom of the basket or steam separately.
  • 2. Whisk together in small bowl, or shake in a jar with a lid, lemon juice, olive oil, salt and pepper until well mixed.
  • 3. In a large bowl, combine chicken strips with steamed vegetables and raw pepper strips. Add lemon/olive oil dressing and stir to coat.
  • 4. Stir in thyme and lemon slices.
  • 5. Served chilled or at room temperature.
