Marinated Roasted Peppers


This is a great way to put nature’s bounty to good use.  Buy up a big bagful of peppers from your local organic farmer, roast some up and marinate ‘em!  This colorful dish is a great addition to a Spanish-style tapas buffet.  Served with olives and some crusty bread, it’s vegan friendly.


  • 1. Roast, peel and slice peppers into narrow strips, reserving the juices. See video for roasting instructions.
  • 2. In a medium mixing bowl stir together sliced roast peppers and their juices, raisins, toasted pine nuts, olive oil, honey, cilantro or parsley, garlic, apple cider vinegar, salt and crushed red chili flakes.
  • 3. Season to taste with black pepper.
  • 4. Marinate in refrigerator at least an hour or two – overnight is even better.
  • 5. Serve at room temperature.
