Massaged Kale Salad

Massaging the kale with lemon juice and salt helps to break down the tough fibers that can make kale so chewy. It’s sort of like tenderizing meat (!) You can add any ingredients to your salad – below is my favorite combination.

Massaged Kale

Instructions

  • 1. Rinse and drain kale. Tear into bite sized pieces and remove any tough stems.
  • 2. Place kale in a large salad bowl, drizzle with juice of ½ lemon, sprinkle with some sea salt and massage the kale with your hands, rubbing each leaf with the lemon juice and salt.
  • 3. Continue to massage until kale starts to soften and wilt, about 2 to 3 minutes, adding more lemon juice and salt as needed and to taste.
  • 4. Set aside and prepare other ingredients. You can let kale sit for several minutes at this point.
  • 5. When you’re ready to serve, add avocado, cherry tomatoes, goat’s cheese, olives and pine nuts to salad. Toss to combine.
  • 6. Drizzle salad with extra virgin olive oil, sprinkle with freshly ground black pepper and serve.
