Roasted Asparagus

I love to roast asparagus. It’s a quick and simple way to cook this delicious springtime vegetable. This isn’t really a recipe, but rather a method. Often the freshest vegetables require the least amount of effort to prepare. The basic seasonings used here encourage the fresh flavor of the asparagus shine.

Instructions

  • 1. Preheat oven to 425°.
  • 2. Place trimmed asparagus spears in a single layer on a baking sheet. I like to use a rimmed cookie sheet.
  • 3. Drizzle asparagus with olive oil and balsamic vinegar.
  • 4. Sprinkle with sea salt and just a few crushed red chili flakes – don’t overdo the heat!
  • 5. Roast 8-12 minutes until done. Roasting time will depend on thickness of your spears.
  • 6. When done, remove from oven and serve hot or at room temperature.
