Roasted Delicata with Chili and Lime

Simple preparation – full on flavor


  • 1. Preheat oven to 350°.
  • 2. Carefully cut squash in half from stem to end. Scoop out the seeds and stringy stuff – you can save the seeds to toast as a snack or plant in your garden.
  • 3. Place squash cut side down in a baking dish. Pour about ¼ inch of water into dish.
  • 4. Bake for 20 to 30 minutes until almost soft. Remove from oven, turn cut side up and add butter, lime juice, chili powder, salt and pepper to each cavity.
  • 5. Return to oven, cut side up, and bake until completely tender and butter is melted.
  • 6. Remove from oven, spoon buttery mixture all around inside of squash and serve.
