“Corn” is not a four-letter word. (Neither is “carb.”) In fact, sweet corn can be a fun, delicious part of summer.
We eat for a lot of reasons: to give us energy, to nourish our body and yes, for pleasure and fun!
In my book, sweet corn ticks all of the boxes! It’s a good source of plant protein, fiber and antioxidants including lutein and zeaxanthin, which are believed to protect your eyes against age-related macular degeneration.
Sure, sweet corn is a starchy veg high in carbohydrates, but the carbs found in whole foods like corn are not the ones to fear.
The carbs found in processed food made from corn by-products are the ones to stay away from.
Chili oil and salt on mine please. :)
